Ingredients:
- 1 (6lb) flat cut brisket, trimmer
- Wayzata Bay Prime Rub
- 2 cups Coca Cola
- 1/4 cup Apple Cider Vinegar
- 2 tbsp Worcestershire Sauce
- your favorite BBQ Sauce
Instructions:
1. Set pellet grill temp to 180 degrees and preheat for min 15 minutes.
2. Season both sides of Brisket with rub.
3. Make Mop Sauce: combine in a clean spray bottle the Coca Cola, Apple Cider Vinegar, and Worcestershire sauce.
4. Arrange brisket fat-side down on the grill and smoke for 3 to 4 hours, spraying with Mop Sauce every hour.
5. Increase grill temp to 225 degrees and continue cooking, spraying hourly with Mop Sauce until thermometer inserted into thickest part of meat reaches 204 degrees. (should take about 6 to 8 hours).
6. Pull meat from grill, foil tightly and let rest minimum 30 minutes. Slice with sharp knife across the grain into pencil-width slices. Serve with warm BBQ Sauce.
